It started with a challenge from a fellow student in our international development club. Dane took him up on it and decided we should trying being vegetarian for a few weeks. We finished that little experiment at the beginning of this week, and I am already thinking of doing it again.
In some ways it was easier than I expected because we had a good variety of things to try: creamy sweet potatoes, quinoa salad for protein with cucumber and tomato, lettuce wraps stuffed with a vegetable stir-fry. At the same time, I was hungry so often and more forethought went into shopping to sustain this kind of eating.
It helped too that we indoctrinated ourself a little before starting. The documentary, Forks over Knives, talks about the research behind the health benefits of animal product free living. I will definitely not go vegan anytime soon, but the facts were very compelling, and it was the fairest commentary of any vegan media I've seen.
I don't know if I can talk Dane into doing it again, he was all too happy to pound a burger our first night back, but I am definitely more motivated to find and use more vegetable based recipes in the future.
